
Mushroom Bolognese

Ingredients
- Mushrooms, white, raw, 12 LB
- Vegetable oil, 1 quart
- Salt, 2 Tbsp.
- Black Pepper, 2 Tbsp
- Carrots, chopped, 6 cups
- Celery, chopped, 4 cups
- Onions, chopped, 6 cups
- Garlic, raw, 2 Tbsp
- Oregano dried leaves, 2 Tbsp
- Rosemary, fresh, 2 tsp
- Nutmeg, ground, 2 tsp
- Marinara Sauce 13 1/4 lbs
- Butter, unsalted, 3/4 cup
