Dietitian Jamie Vespa contributed an article to Yummly that serves as a primer for those looking to start a plant-based diet. She includes The Blend as one of the tips for increasing vegetable consumption, suggesting “using half plants and half animal protein in classic meat-centric dishes. For instance, the Mushroom Meatloaf…employs a mix of umami-rich ‘shrooms to turn classic beef meatloaf into a veg-forward version.” 

The Kitchn shared the recipe for a convenient and delicious Herby Salmon with Garlic Butter Mushrooms. The recipe points out that “you’ll love how easy it is to prepare: it requires just five ingredients and can be pulled off in 25 minutes or less. This is weeknight eating at its very best.”
