Mushrooms in the News: 05-16-2022

Flavor & the Menu’s Rob Corliss professed their appreciation for mushrooms in the extensive feature “Umami King.” Rob declared mushrooms as “gastronomic joy,” and shared with chefs and menu developers tips and recipes for prepping mushrooms in myriad styles, from sautéed and roasted to pickled and smashed. 

The Consumer Reports TV segment on why mushrooms are the “it vegetable” continues to air on stations nationwide, with Omaha, NE and Greensboro, NC becoming the latest to air the feature. The segment highlights the popularity of mushrooms over the past few years, in addition to nutrition facts and recipes.

What did Julia Child have to say about mushrooms?  Tasting Table this week dug into Child’s archives for her tips on sautéing mushrooms for an array of dishes.
