  • 1 cup Canola Oil
  • 3qt Portabella Mushrooms, Raw, Diced
  • 1 cup Cumin
  • ½ cup Chili Powder
  • 1 #10 can Black Beans
  • 12lb Mild Cheddar Cheese, Shredded
  • 1qt + 1 cup Sour Cream
  • 2 gal Enchilada Sauce
  • 200 6” Whole Wheat Tortillas
  • 8oz Cilantro
  • 2lb Fire Roasted Green Chili Peppers
