
Mushroom Cheese Black Bean Enchilada

Ingredients
- 2qt + 2 cup Onions, Raw, Chopped
- 1 cup Canola Oil
- 3qt Portabella Mushrooms, Raw, Diced
- 1 cup Cumin
- ½ cup Chili Powder
- 1 #10 can Black Beans
- 12lb Mild Cheddar Cheese, Shredded
- 1qt + 1 cup Sour Cream
- 2 gal Enchilada Sauce
- 200 6” Whole Wheat Tortillas
- 8oz Cilantro
- 2lb Fire Roasted Green Chili Peppers
