Mushrooms in the News: 10-21-2020

Whole Foods released their Top 10 Food Trends for 2021 this week. The grocer listed mushrooms within its “Wellness Through Food” category, and also listed mushroom jerky. In a 2021 trends forecast  article by Phil Lempert in Forbes, he notes that we should expect “More blended foods – both made at home and bought ready made in sores building on the success of the Mushroom Council and James Beard Foundation’s blended burger success – the combination of mushrooms and ground beef – that is already being extended to other proteins and other vegetables.”

The coverage has so far been picked up by a handful of consumer and trade outlets, including Progressive Grocer and The Packer.

Mushrooms this week were the star of two major recipe round-ups, with Bon Appétit presenting “27 Healthy Mushroom Recipes That Put the Fun in Fungi” and Parade presenting “35 Stuffed Mushroom Recipes That Will Win You All the Holiday Appetizer Awards.”

Additionally, U.S. News & World Report suggests mushrooms as a “good food source for vitamin D;” explaining “for instance, a half-cup of portabella mushrooms has just 1% of the RDA of vitamin D, but when exposed to UV light, that spikes to 120%, according to the Mushroom Council.”
