With peak grilling season upon us, the Pittsburgh Post-Gazette featured a lengthy article illustrating the various ways to grill with mushrooms, particularly portabellas: “And if you want veggies to shine, portobello mushrooms have a beefy, earthy flavor that makes for a magical meatless burger.” 

Clean Plates highlighted 7 Immune-Boosting Breakfast Recipes Nutritionists Love and shared a delicious mushroom toast recipe. “Fresh mushrooms are a nutritional powerhouse filled with immune-supporting nutrients like vitamin D, selenium, zinc, copper, and B vitamins.” 

Eating Well highlighted 6 Anti-Inflammatory Vegetables You Should Be Eating, According to a Dietitian and mushrooms came in at number four: “These fungi contain ergothioneine, an antioxidant that may increase levels of an anti-inflammatory hormone.” 

The Food Institute shared 5 Healthy Alt-Meat Products showcasing mushroom versatility and spotlighting blended products at retail. “Mushrooms are very trendy and very meaty tasting, naturally! Mushrooms have umami – a flavor profile that is just like meat, so it makes sense that mushrooms are starting to pop up in the plant-meat space.”
