Mushroom Mondays continue to gain attention in food media with two stories this past week.

First, Eat This, Not That! features mushrooms in its listing of 10 Best Fruits & Vegetables To Eat for Longevity, with mushrooms at #2. The article encourages “making Mondays a ‘Mushroom Monday’ to make a habit of eating mushrooms in your longevity-supporting diet.”

Next, Martha Stewart spotlights How to Eat Less Meat (Without Missing It), with mushrooms listed throughout. Our favorite day, in particular, gets a callout: “We’ve all heard of Taco Tuesday, but what about Mushroom Monday? Leaning on mushrooms instead of meat can offer a complementary texture with far less fat than animal products.”

With summer bbq-ing right around the corner, Tasting Table shared a Vegan Barbecue Pulled Mushroom Sliders Recipe. “Featuring tender king oyster mushrooms marinated in a savory blend of soy sauce, apple cider vinegar, and aromatic spices and then tossed in a homemade barbecue sauce, each bite is a blend of smoky, tangy, and sweet notes.” 

Eater Atlanta highlights the shroom-boom during the Atlanta Mushroom Festival featuring creative dishes from local chefs. Chef Carla Fears of Gourmet Street Foods shared a meatless steak with lion’s mane. Chef Fears shares, “Cooking with mushrooms is easy. I could do them stuffed, sauteed, pickled, or in confit. But Lion’s Mane thrown in a pan with some sauce? This feeds everyone.”
