Mushrooms in the News: 01-24-2022

Mushrooms were featured in a variety of recipes this week, from breakfast to dinner. The Tasting Table and St. Louis Post-Dispatch shared their twists on mushroom soups, while the Today Show shared their take on Dr. Martin Luther King, Jr. ‘s reported favorite “smothered steak” dish. Mashed covered the morning meal with their ideal Egg Strata with Mushrooms, while Food52 shared a tasty Vegan Crab & Cream Cheese-Stuffed Mushroom recipe as an appetizer.

VegNews shared an update on Atlast Food Co., who will be cultivating mushrooms in order to develop around 3 million pounds of vegan bacon in 2022. “After more than a decade of experience growing and producing the highest quality gourmet mushrooms, we’re excited to leverage our expertise in the new market of alternative proteins.”
