Mushrooms in the News: 02-01-2022

National Public Radio’s popular food and cooking program “The Splendid Table” devotes their latest episode to mushrooms – cultivated and foraged.  In the episode titled “The Magnificent Mushroom,” host Francis Lam interviews cookbook author Eugenia Bone about how to select and prepare mushrooms. Eugenia says mushrooms can mimic meat and don’t need fat for flavor unless you want to add it. 

Kim Severson – the New York Times reporter who declared mushrooms the “Ingredient of the Year” – joined SiriusXM’s morning show to talk 2022 food trends.  In the 12 minute segment titled “Calling All Mushroom Fanatics,” host Julie Mason and Severson discuss why mushrooms are a continuing trend. Severson says: “I feel like mushrooms are the Susan Lucci of trends lists… mushrooms always show up and are always trying to get a place on the list.”
