Your school breakfast program ensures that students enter the classroom with a full belly and nourishment needed to learn! Research has shown that school breakfast programs improve academic performance, reduce student hunger, and add needed nutrients to students’ diets [1].

One of our favorite ways to celebrate breakfast is through the tasty combination of eggs and flavorful mushrooms. There are so many beloved ways to mix these two ingredients for breakfast food served at any time of the day! Read on to learn about our tips and tricks for combining eggs and mushrooms at breakfast.

Tips for Using Liquid Eggs

Liquid eggs are a popular ingredient in school meals. Here are our tips to take your use of liquid eggs to the next level.

  • Always season liquid eggs as the first recipe step. Adding dry seasonings to liquid eggs helps the dry seasonings bloom and enhances the flavor of the liquid egg base.
  • Frozen liquid eggs take several days to thaw. You may notice that liquid eggs separate as they thaw. Not to worry – simply whisk gently when you are ready to prepare.
  • You can add many flavors to your liquid egg base! Try hot sauce, cayenne, diced tomatoes, or even sriracha sauce!

Ways to Serve Mushrooms and Eggs

Breakfast Burrito

The breakfast burrito is a delicious way to enjoy breakfast wrapped in a flour tortilla. Our recipe calls for tater tots, fresh sliced mushrooms, fresh jalapenos, and shredded cheddar cheese for a delicious, flavorful filling.

Quiche

Cooking quiche is a snap with liquid eggs! You can add all kinds of fresh vegetables and seasonings. Our recipe combines sriracha and garlic powder with fresh sliced mushrooms, peppers, onions, and shredded cheddar cheese.

Classic Omelet

Take a page out of the school meal program in Oyster River, New Hampshire and set up an innovative omelet bar. At Oyster River, students love choosing their omelet fillings, and the fillings can change with the season. Try fillings such as tomatoes, sausage, ham, spinach, and thinly sliced mushrooms.

Not serving meals in the cafe due to the pandemic, or short on time? It is possible to speed-scratch a mushroom cheddar omelet by utilizing a pre-made egg omelet. Our recipe calls for fajita seasoning, sliced fresh mushrooms, and peppers and onion fajita blend. Don’t forget the fun name, such as “Chef’s Gourmet Omelet” and some hot sauce!
