Mushrooms in the News: 03-07-2023

One of the nation’s most influential food writers, Washington Post’s Tamar Haspel, spotlighted mushrooms in her in-depth opinion column, “These foods are climate-friendly, and just as important, delicious.” In the article, she cites the Council’s sustainability study, notes mushrooms are ideal for blending and links to the Council’s blended burger taste test study. “I think it’s safe to say that eating mushrooms is a good environmental choice.”

Real Simple featured three articles highlighting mushrooms, topics focused on varieties, and two recipes, a blended burger and pho. The editor shares, “You can’t spell fungi without fun. There are lots of varieties in the grocery store…They’re packed with B vitamins and antioxidants, and they bring on the flavor. So make room for shrooms.” 

Pedro Pascal recently shared how he feels about mushrooms on “Late Night with Seth Myers” after starring in The Last of Us. Pascal says, “I love mushrooms, all kinds.” 

Women’s Health includes mushrooms in their recent article, “The 15 Healthiest Vegetables to Eat.  Mackenzie Burgess, RDN & recipe developer was quoted in the article sharing, “Mushrooms are the only food in the produce section that features vitamin D…Just a handful of UV-exposed mushrooms can be an excellent source of vitamin D, which is very helpful considering over 40 percent of the population is deficient.”

Shiitake mushrooms are a great source of Cooper.
