Mushrooms in the News: 10-24-2022

Tasting Table this week developed an in-depth overview of one L.A. chef making mushrooms a central ingredient on myriad dishes –  for its sustainability, versatility and taste. The article’s headline – “Mushrooms are a versatile source of meaty flavor, texture” – then became the subject line of the Oct. 18 ProChef SmartBrief e-newsletter, sent to thousands of menu developers nationwide.

With this past Saturday being National Mushroom Day, the New York Times’ food newsletter led with the headline, “It’s Mushroom Week!,” featuring multiple ideas and recipes for incorporating mushrooms. VegNews marked the day with a gallery of recipes which also discussed the nutritional benefits of mushrooms.

Thanksgiving prep is already starting, with Food Network Magazine sharing ways to make your own custom stuffing, and Prevention sharing a recipe for a kale and oyster mushroom side dish.

Trades including The Packer and The Produce News took note of this year’s Blended Burger Contest winners, with Pork Business calling out the prevalence of pork in the winning recipes.
