The Packer featured an in-depth article on mushrooms’ continued popularity despite inflationary costs in the grocery store. The article references several mushroom farms such as Mother Earth Organic Mushrooms, Phillips Mushroom Farms, and Giorgio Fresh Company noting their unique stories in each operation and showcasing how retailers can capitalize on the rising popularity. The article closes with a highlight of the Mushroom Council’s forthcoming National Mushroom Month campaign. 

Eating Well featured a simple and fast recipe for any lunch or weeknight meal featuring a mix of cremini, shiitake, and oyster mushrooms: “These super-savory lettuce wraps feature a mix of mushrooms and plenty of peanuts for crunch. Refrigerated garlic and ginger pastes help keep prep to a minimum.” See the recipe here

A stuffed mushroom recipe with basil and parmesan mayo was highlighted in Serious Eats, 20 Basil Recipes to Use Up Your Summer Bounty. The mushrooms are grilled until tender and then the article notes, “The mayonnaise provides a creamy contrast to the meaty mushrooms, and this version—seasoned with basil, Parmesan, and garlic—is herbal, with a pleasantly salty bite.”
