Mushrooms in the News: 02-15-2022

Consumer Reports shared the health benefits of mushrooms, citing their ability to enhance a wide variety of recipes and their nutritional benefits for the boom in mushroom’s popularity. According to the article, “Mushrooms are wonderful sources of the minerals potassium and selenium,” says Joan Salge Blake, RDN, a nutrition professor at Boston University. “Potassium can help lower high blood pressure, while selenium is an antioxidant that protects your cells from free radicals. If free radicals accumulate faster than your body can neutralize them, their damaging effects can contribute to chronic diseases such as heart disease and age-related macular degeneration.” 

The Today Show online news site showcased how mushrooms can be a major part of the Mediterranean diet, while The New York Times profiled portabella cooking techniques.

In preparation for the big game on Sunday, the Chattanooga Times shared local restaurant Bud’s Sports Bar’s recipe for stuffed mushrooms. Love Food shared two articles on incorporating mushrooms into your diet, while Bon Appetit shared their take on a Hot Pot Broth.
