Marinated Mushroom Salad

Description

Your students are in for a treat when marinated mushroom salad is on the menu! A medley of mushrooms, vegetables, and basil marry Balsamic vinaigrette to deliver delicious flavor and texture. This menu item can be made the day prior to service making it a great addition to your menu when you need to plan ahead.


Ingredients

  • 5 lb mushrooms
  • 1/8 cup vegetable oil
  • 1 package tomatoes
  • 3 bunches basil
  • 3 lbs red bell peppers
  • 5 lbs yellow onion
  • 1 bag, 2/3 cup balsamic vinaigrette dressing
