Description
This savory vegetarian version of the traditional ramen bowl dish was created by Littleton Public Schools in Massachusetts for their Mushroom Monday Celebration! This dish is packed with nutrition, featuring a variety of vegetables including mushrooms, whole grain noodles, and egg.
Ingredients
33 cakes – Noodles, Ramen, Whole Grain
50 large – Egg, whole, cooked, hard-boiled
3 lbs., 2 oz. raw to prepared – Mushrooms, white, raw
3 lbs., 2 oz. – Spinach, raw
6 lbs., 4 oz. shredded – Carrots, raw
50 lbs. – Vegetarian Ramen Broth
37 lbs., 8 oz. – Soup, vegetable soup, condensed, low sodium, prepared with equal volume water
12 lbs., 8 oz. – Beverages, water, tap, municipal
1 qt., 2 tbsp., 2 tsp. – Sauce, Soy, Less Sodium
1 pt., 1 tbsp., 1 tsp. – Garlic, raw
1 pt., 1 tbsp., 1 tsp. – Ginger root, raw
1 pt., 1 tbsp., 1 tsp. – Oil, sesame, salad or cooking
