
Chicken & Mushroom Casserole
Description
Chef Kevin Jenkins created this delicious mushroom dish to celebrate Mushroom Monday. This hearty & nutritious chicken casserole is full of mushrooms, broccoli, and brown rice in a creamy cheese sauce. It was a hit with both students and teachers!
Ingredients
1/8 cup– Pasta Sauce Blend Seasoning
2 lbs- Brown Rice
2 1/2 lbs- Chicken Strips
2 lbs- Frozen Broccoli
1 bag- White Cheese Sauce
3 cups– Shredded Cheddar Cheese
2 cups– Fresh Sliced Mushrooms
1 can- Cream of Mushroom Soup
1 cup– Shredded Mozzarella Cheese
2 tsp– Dried Parsley
