Mushroom Bolognese

Description

The Mushroom Bolognese sauce is a delicious vegetarian twist to traditional meat-based Bolognese sauce that was well-received, especially by our vegetarian students.  The mushrooms in this dish provide the perfect balance of the umami flavor, which is perfect for vegetarian entrees. This student-approved recipe is a win and a great way to introduce mushrooms to students in a familiar dish!


Ingredients

  • Mushrooms, white, raw, 12 LB
  • Vegetable oil, 1 quart
  • Salt, 2 Tbsp.
  • Black Pepper, 2 Tbsp
  • Carrots, chopped, 6 cups
  • Celery, chopped, 4 cups
  • Onions, chopped, 6 cups
  • Garlic, raw, 2 Tbsp
  • Oregano dried leaves, 2 Tbsp
  • Rosemary, fresh,  2 tsp
  • Nutmeg, ground, 2 tsp
  • Marinara Sauce 13 1/4 lbs
  • Butter, unsalted, 3/4 cup
