Mushroom shakshuka is a hearty twist on the classic Middle Eastern dish, featuring savory mushrooms simmered in a rich, spiced tomato sauce. Eggs nestled in the sauce, adding a creamy texture that complements the earthy mushrooms and bold seasonings.


Ingredients

  • Mushrooms, fresh, sliced- 3 pounds
  • Tomatoes, diced, canned, unsalted- 1⁄2 #10 can
  • Peppers and onions, frozen- 3 1⁄4 pounds
  • Tomato paste, unsalted- 5 ounces
  • Oil, vegetable- 2 T
  • Cumin, ground- 2T
  • Garlic, granulated- 2T
  • Salt, kosher- 1t
  • Eggs, whole- 2 dozen
  • Cheese, feta- 8 ounces
