- Rice, brown, parboiled, dry- 3 1⁄4 pounds OR Rice, brown, cooked- 1 1⁄2 gallons, 1 cup
- Water (for dry rice only)- 3 1⁄4 quarts
- Peas and carrots, frozen, thawed- 2 1⁄4 pounds
- Soy sauce, less sodium- 10 ounces
- Sesame oil- 2 tablespoons
- Ginger, ground- 3 tablespoons
- Garlic, granulated- 3 tablespoons
- Sugar, brown- 2 tablespoons
- Scallions or green onions, cut on bias- 1 1⁄2 cups
